#161: Protein Yogurt Bark

One thing I love to snack on when I’m looking for something sweet but still healthy, is yogurt. Along with its health benefits, it just tastes good. And especially on fall days when the weather is still warm, this particular form of yogurt is a great way to cool off.

Speaking of cooling off, for any leftovers, you can store them in a sealed container in the freezer for up to a month or so. But once you remove them from the freezer, I would recommend consuming them right away since it’ll start to melt almost immediately.

One of my favorite things about this recipe, like with a lot of recipes I’ve made in the past, is that it’s highly customizable in terms of flavors and toppings. Depending on the flavor of the yogurt and protein powder you use, you can really tailor your yogurt bark to your particular flavor preferences. In addition to the ones I showed off in this recipe, one other flavor combo that I recommend trying out is an Elvis-inspired yogurt bark, with powdered peanut butter instead of protein powder, and banana slices and bacon for the topping. The limit is really just your imagination, so definitely try out different combinations and let me know of your favorites in the comments below!

But regardless of what toppings and flavors you use, this sweet and healthy snack will be a great way to cool off on a hot Indian summer day, or you can enjoy it even if it’s the coldest day of the year.

Ingredients:

  • 2 cups yogurt (I recommend greek or other high protein yogurt)
  • 2 tbsp honey/maple syrup
  • 1-2 scoops (⅓-⅔ cup) protein powder (any type should work, so use your favorite flavor!)
  • Some toppings (optional)
    • Some raspberries, blueberries, strawberries, or any other type of fruit/berry that you like)
    • Some granola
    • Some chocolate chips
    • Some nuts/seeds
Step 1: Line Baking Sheet w/ Parchment Paper; Mix Together Yogurt, Honey/Maple Syrup, & Protein Powder

First, line a baking sheet with some parchment paper to make removal easier and set this aside. Then, to a mixing bowl, add in the yogurt, honey/maple syrup, and protein powder, and stir this until everything is mixed together.

Step 2: Spread Yogurt Onto Prepared Sheet Pan

Next, pour the yogurt mixture onto the prepared sheet pan and spread it with a spoon or spatula into an even layer. It doesn’t need to perfectly fill the pan, just try to spread it out as evenly as possible, so it freezes evenly.

Step 3: Add Toppings To Yogurt

Then, once the yogurt base is ready, chop up any of your toppings into smaller pieces if needed, and then scatter your toppings of choice evenly over the yogurt.

Step 4: Freeze Yogurt Bark For At Least 3-4 Hours

Once it’s to your liking, place the sheet pan in the freezer and let this freeze for at least 3-4 hours, until it becomes very firm.

Step 5: Cut Yogurt Bark Into Pieces & Enjoy!

Then, once the bark has solidified, use a knife to cut, or use your hands to break the bark into pieces, and with that, your Protein Yogurt Bark is ready to eat.
